Embracing culture is one thing that I have loved since I was born. Interaction with different people allow you learn so many things. At your comfort zone, you may take centuries to learn that there are better things around the world that you can always love. Today, I would like to let you know how to prepare what my brothers from Mount Kenya call “mukimo”. This is one of the major traditional food that every kikuyu has always been proud of.
it will not take you a long time if you have all the ingredient parked. To begin with, you will need Cucurbita ficifolia commonly known as “kahurura” among the kikuyu community. You will also need zea mays or simply “bebe” as it known to kikuyus. Another important ingredient is Irish potatoes. I know it would be simpler to call it “waru”.
Now let’s get started. many people prefer cooking this delicious meal using “githeri” but in our cases we are going to use maize alone. Your primary targeted should be focused on ensuring that the maize is cooked well. You are already one step ahead. I will not be too formal so I will not go much into the recipe details and the amount you need to cook, just ensure that your meal will be enough for the number of people you are preparing it for.
Now you will need to get enough sufuria that will be able to accommodate your mukimo. After pilling your Irish potatoes, place a half on the sufuria. On top of it, add kahurura and them add the remaining half of the Irish potatoes. add enough water that will enable you to boil the mixture until they are well boiled. Cover the sufuria and give boil until its ready.
When this procedure is done and you are sure that there is no more water left in the sufuria, add your cooked maize. The next procedure is now what will let you make the real mukimo. you will smash the three ingredients together. You will notice that as you continue mixing smashing them, the mixture will be coming compact and the color will be turning to green. Look at that! its what we call mukimo. You can add your ingredients to improve its taste.
